unwrap is usually use on the phase of S-parameters. Say if you measure a transmission line over frequency, the phase of S21 goes from 0 to +180, then jumps to -180 and goes to +180, etc. If you use unwrap, the phase of S21 will goes from 0 to 360 and up.
why they want to unwrap the phase? probably to calculate the group delay. If there is a jump in phase, then the group delay will jump everytime it switches from +180 to -180.
